CHICKEN TAGINE WITH CHICKPEAS AND FRESH FIGS

Fixings :
  • 3 tablespoons olive oil, partitioned
  • 3 huge onions, cut
  • 1 kg chicken thighs or legs
  • 4 garlic cloves, peeled  and squeezed
  • 1 teaspoon turmeric
  • 1 teaspoon ground ginger
  • ¾ teaspoon salt or to taste
  • ¼ ground black pepper
  • 150 ml vegetable stock
  • 1 x 400 gr containers of chickpeas, flushed and depleted
  • 500 gr ripe figs (around 8), torn 6 pieces and more for embellishment whenever wanted
  • Roughly chopped fresh coriander

Strategy :

•  In a huge pan include the olive oil over medium warmth and include the onions. Spread with a top and leave until the onions are delicate and translucent, 15 to 20 minutes. Mix once in a while. Include the garlic, turmeric, ginger, salt and dark pepper into the pan and cook for 5 minutes mixing infrequently. Spot the chicken inside the pan and pour in the chicken stock. Decrease the warmth to medium-low, spread with a cover and leave to stew delicately until the chicken is nearly cooked, around 45 minutes.
